Mozzarella di Bufala Campana PDO is a typical Italian food product, produced using only fresh whole milk from buffaloes of the Italian Mediterranean breed bred in their area of origin. Mozzarella di Bufala Campana has a Protected Designation of Origin (PDO) [DOP]. The European Union has recognised to Mozzarella di Bufala Campana the particular organoleptic and product characteristics that are the result of precise environmental conditions and traditional processing methods that exist only in the PDO production area.
Mozzarella di bufala campana is the fourth Italian PDO by production value, after Grana Padano, Parmigiano Reggiano and Prosciutto di Parma. The word 'mozzarella' derives from the Italian verb 'mozzare' - to cut -, an ancient practice still in use today in all dairies, which consists of shaping the piece of spun paste with the hands and detaching - or mozzarezzare - the individual mozzarellas using the thumb and forefinger. This produces the typical rounded shapes of this uniquely flavoured dairy product. A Mozzarella di Bufala Campana PDO is immediately recognisable by its characteristics: white porcelain colour, smooth and compact surface, and the aroma of freshly milked buffalo milk.
The most classic form of Mozzarella di Bufala is round with individual sizes ranging from 10 g (bead, cherry ovolina, bocconcino) to 800 g. However, the specifications allow for other shapes typical of the production area such as knots and braids that can weigh up to 3 kg.
